Easy Beef Enchiladas

I love Mexican food. My favorite Mexican dish is Enchiladas, Mexican Rice and homemade Refried Beans. My mom makes the best Enchiladas and homemade Refried Beans. What I like about Enchiladas is that there is an easy and hard way to make them. I personally love the easy way. If you are looking for something quick and easy for dinner then Easy Beef Enchiladas is the way to go.

Ingredients:

1 lb ground beef
1/2 cup onion, chopped (I used minced onion because I don't like that much of onion taste)
2 cup cheddar cheese, shredded
20 oz can enchilada sauce (I used a 28 oz can of mild enchilada sauce)
8 flour tortillas (I used 12 tortillas in order to make a dozen enchiladas)

Directions:

1. Preheat oven to 350 degrees. Brown meat and onions in large skillet. Drain.

2. Once the meat is browned and drained, add 1 cup of enchilada sauce and 1 cup of cheese.

3. Mix well.

4. Place about 1/2 a cup or so along the center of each tortilla

5. Roll tortilla up and place seam side down in a 9x13 pan

6. Once all tortillas have been rolled and placed in pan, pour remaining sauce over them.

7. Sprinkle remaining cheese over the top.

8. Bake for about 30 minutes or until cheese is bubbly.

Cooking Tip:

I serve my Enchiladas with Refried Beans, Mexican Rice and chips.

  3. You are someone to know, Amanda! I love this recipe and I love your blog. Have you considered making meals for people to order? I know I'd buy several of your meals if it means I wouldn't have to cook!

  4. Shannon, I have never thought about making meals for people to order before. I might have to consider doing this as a "side job." It would be fun that is for sure.
